One of the first things people say when I mention going Keto or Low-Carb is: "I could never give up bread!" But here’s the truth — you don’t have to. 🙌


Now, I won’t claim these mimic the exact chew and crust of a traditional sourdough (if I ever crack that code, you’ll be the first to know! 😉), but with the right balance of grain-free ingredients, you can absolutely enjoy flavorful, satisfying buns that hit the spot.


I originally shared this recipe in 2017, and I still make it regularly — it’s that good. Over time, I’ve fine-tuned the method and added helpful tips to answer all your questions.

Keto Buns


Servings: 4

Prep Time: 5 Minutes

Cook Time: 25-30 Minutes



Ingredients:


  • 3 egg whites

  • 1 egg, large room temperature

  • 1/4 cup hot water

  • 1/4 cup + 2 Tablespoons almond flour

  • 1/4 cup coconut flour

  • 1 Tablespoon flax seed or psyllium husk powder

  • 1 teaspoon baking powder

  • pinch of sea salt

  • sesame seeds, for sprinkling optional



Instructions:


Preheat your oven to 350°F.


In a large bowl, mix the dry ingredients. Then add everything to a food processor (or use an electric mixer) and blend until smooth — about 20 seconds. Be careful not to over mix the dough.


Let the dough rest for a couple of minutes to allow the flours to absorb the moisture.

Divide the dough into 4 equal portions and shape into buns. (Lightly wet your hands to prevent sticking.)


Place the buns on a parchment-lined baking sheet. Sprinkle with sesame seeds or your favorite toppings.


Score the tops with a shallow criss-cross cut and bake for about 25 minutes, or until golden brown.



Notes:


🥄 Dough too runny?

Add a bit more almond flour and coconut flour until the mixture is firm enough to shape into buns. 💪🥥🌰


🔥 Buns browning too fast?

If they’re getting golden before the 25 minutes are up, loosely cover them with aluminum foil to prevent burning. ⏳🛡️


📏 Doubling the recipe?

The baking time will likely increase by about 5–10 minutes, so keep an eye on those buns! 👀⏲️


🧂 Topping Ideas


Swap sesame seeds for poppy seeds, sunflower seeds, or black sesame — or go bold with Everything Bagel seasoning for extra flavor!


🍽️ Serving Suggestions


  • Breakfast: Toast and spread with butter or sugar-free jam

  • Lunch: Sandwich with ham, cheese, lettuce, tuna, chicken, or egg salad

  • Dinner: Serve with soups, stews, salads or as a bun for keto burgers


🧊 Storage Tips


Store in an airtight container in the fridge for up to 5 days, or freeze for up to 3 months. They toast beautifully — just slice and pop straight into the toaster from frozen!
