🥚✨ Oopsie Rolls: The Magical, Fluffy, Low-Carb Bread You NEED in Your Life! 🍞💫

Hey there, food-loving friend! 👋💕

Have you ever bitten into something so light, fluffy, and cloud-like that you almost forgot it wasn’t actual bread? 😲✨ Let me introduce you to your new best friend in the kitchen — Oopsie Rolls! 🎉

Imagine bread with ZERO carbs. 🍞✨

Yeah, I know — when I first heard that you could make "bread" out of egg whites and Greek yogurt, I was like, “Absolutely not.” 😅

But as a self-proclaimed carb lover who’s always on the hunt for low-carb swaps that make life feel a little less sad 🥲, I gave it a shot. And you know what? It’s surprisingly good!

Okay, okay — it’s not going to fully replace a fresh, crusty loaf from your favorite bakery 🥖💔, but if you're doing keto or just need a fluffy, carb-free option to get you through a sandwich craving, Cloud Bread totally delivers. 💨💯

These dreamy little buns are the stuff of low-carb legends. Born from a happy kitchen accident (hence the adorable name! 😍), Oopsie Rolls are here to change your sandwich game forever. Whether you're keto, gluten-free, or just looking for a super fun and simple recipe to whip up, these cloud-like creations are a must-try! ☁️💛

🥚 So... What Are Oopsie Rolls?

Great question, my foodie lover! 😘

Oopsie Rolls are soft, airy, pillowy bread substitutes made with just a few basic ingredients — and guess what? No flour at all! That means they’re naturally:

  • Gluten-free

  • Low-carb

  • Keto-friendly

  • High in protein

  • Ridiculously delicious

All you need to get started are:

  • 🥚 Eggs

  • 🧀 Cream cheese (or Greek yogurt if you're feeling adventurous!)

  • 🌟 A pinch of magic (okay fine, baking powder or cream of tartar 😉)

  • Other ingredients are flavor-town fun!

They’re called oopsie rolls because the original recipe was created when someone accidentally left out the flour while making a regular bread recipe. Total oops — but the result? A soft, melt-in-your-mouth miracle. 🪄💖 Just like the accidental Chocolate Chip Cookie! - Try my KETO friendly "oopsie" cookies - Keto Chocolate Chip Cookies

💬 Final Thoughts From Your New Oopsie Obsessed BFF 💕

Oopsie Rolls are proof that accidents in the kitchen can lead to magical discoveries. Whether you’re watching your carbs, avoiding gluten, or just want a super fun recipe to try with the kids, these fluffy little clouds are guaranteed to bring joy to your plate — and a smile to your face. 😄🍽️

Go ahead, give them a try! And don’t forget to tag me in your creations because I need to see your gorgeous cloud-bread babies! 📸💕

Stay fluffy, my foodie friends! ☁️💖

Oopsie Rolls

Servings: 6

Prep Time: 10 Minutes

Cook Time: 25 Minutes

Ingredients:

  • 8 large eggs, separated

  • 1 teaspoon cream of tartar

  • 4 ounces cream cheese

  • 1/2 teaspoon sea salt

Optional Sweet Version Add-ins:

  • 1 tablespoon sugar-free sweetener of choice

  • 1 teaspoon vanilla extract, or your favorite flavor

Instructions:

Don’t worry, sweetie — if you can crack an egg, you can make these rolls. Promise! 😄 Here's a step-by-step guide:

Preheat the oven to 300 degrees F. If you have a convection oven, set on convect. Line two large baking sheets with parchment paper.

Separate the egg whites and egg yolks. Place the whites in a stand mixer with a whip attachment. Add the cream of tartar and beat on high until the froth turns into firm meringue peaks; set aside.

Place the cream cheese in the empty stand mixing bowl. Beat on high to soften. Then add the egg yolks one at a time to incorporate. Scrape the bowl and beat until the mixture is completely smooth. Then beat in the sweetener, vanilla and salt; if using.

Gently fold the firm meringue into the yolk mixture. Try to deflate the meringue as little as possible, so the mixture is still firm and foamy. Spoon 1/4 cup portions of the foam onto the baking sheets and spread into even 4-inch circles, 3/4 inch high. Make sure to leave space around each circle.

Bake on convect for 15-18 minutes, or in a conventional oven for 20-25 minutes. The bread should be golden on the outside and firm. The center should not jiggle when shaken. Cool for several minutes on the baking sheets.

Cool completely on wire racks.

Serve with tea or coffee for a sweet treat!

Notes:

🥪 Endless Ways to Enjoy Oopsie Rolls!

These rolls are SO versatile, you'll want to put them on everything. Here are just a few fun ideas:

  • 🥓 Breakfast Sammy – Add bacon, egg, and cheese. YES PLEASE.

  • 🥑 Avocado Cloud Toast – Smash up that avo, sprinkle with chili flakes & a squeeze of lemon.

  • 🐔 Mini Chicken Sliders – Perfect for game day or a cute little lunch!

  • 🍓 Sweet Treats – Add cinnamon & a tiny bit of stevia to the mix and top with strawberries + whipped cream. Omg! Check out my Keto Danish recipe for a grea breakfast or sweet dessert treat!

You can also store them in an airtight container for a few days or freeze them for future snack attacks. However the texture is best if eaten within 12 hours of baking. 💼❄️
