French Toast Egg Loaf
Servings: 6
Prep Time: 10 Minutes
Cook Time: 30 Minutes
Ingredients:
8 oz cream cheese softened/melted
8 large eggs
4 Tbsp Butter melted
1 tsp Cinnamon
1 Tbsp Truvia sugar, optional (your choice of sweetener)
1 Tbsp Vanilla extract
1 tsp Maple extract, optional
Instructions:
Preheat oven to 350.
Prepare a loaf pan or 11×7 baking dish by greasing the bottom with butter.
Remove butter and cream cheese from the fridge and allow them to reach room temperature
Add cream cheese, and butter into a bowl.
Melt in microwave for 1 minute.
Add eggs, spices and truvia sugar.
Blend until smooth and a liquid consistency.
Pour into prepared baking dish.
Sprinkle top with cinnamon and or nutmeg if you wish.
Bake at 350 for 20-30 minutes. Less time will make it more like flan, longer will make it more like a solid custard with a yummy mushy bread texture.
Drizzle with sugar free maple syrup, and a dollop of whipped cream.
Refrigerate remaining loaf covered tightly for up to 4 days.
