Keto Avocado Toast
Servings: 2
Prep Time: 10 Minutes
Ingredients:
1 Keto Bagel or Roll, sliced in half and toasted
2 ripe avocados
5 grape tomatoes, sliced in half
6 slices of cooked bacon, crumbled
4 teaspoons lime or lemon juice
Pinch of salt & pepper
1/2 teaspoon My Everything but the Bagel seasoning, or your brand choice
Instructions:
In a mixing bowl, add your avocado and mash gently; leave it a little chunky for texture!
Add in the lime or lemon juice, salt and pepper; mix until combined.
Slice open your Keto Bagel or Roll; toast your slices to your liking. If you like them burnt, no judgement here!... Cause I do! 🤣🥯
Spoon and smear the avocado mixture amongst the slices of toast.
Sprinkle over top the Everything but the Bagel seasoning amongst all 4 slices.
Distribute tomato slices and crumbled bacon on top; evenly on all four slices.
Serve immediately.
Notes:
🍽 Serving Ideas:
Add a smear or schmear (depending where you're from) of cream cheese over the toasted bagel or roll before adding the avocado mixture and remaining toppings. (For an extra creamy, cheesy rich flavor!)
Add a fried egg, or smoked salmon on top
Garnish with fresh herbs
Sprinkle with goat cheese, pickled onions, sprouts, or arugula
Finish with a drizzle of olive oil and balsamic vinegar
Storing you leftovers:
Low-carb avocado toast is best enjoyed fresh, but if you have any leftovers, refrigerate in an airtight container for up to one day.🥯💚
