Cloud Bread
Servings: 6
Prep Time: 10 Minutes
Cook Time: 20-30 Minutes
Ingredients:
4 large eggs, separated
1/2 teaspoon cream of tartar
2 ounces reglar cream cheese
1/2 teaspoon sea salt
Herb Version: (add the following seasonings for a savory taste.)
1 teaspoon Italian herb seasoning, or your favorite seasoning
1/4 - 1/2 teaspoon garlic powder
Sweet Version: (add the following seasonings for a sweet taste.)
1 Tablespoon vanilla extract
1 teaspoon cinnamon
1 teaspoon of sugar-free sweetener, of choice
Instructions:
Preheat your oven to 300°F. If you're using a convection oven, go ahead and set it to the convection setting. Line two large baking sheets with parchment paper and set them aside.
Separate the egg whites from the yolks. Add the egg whites to the bowl of a stand mixer fitted with the whisk attachment. Sprinkle in the cream of tartar, then whip on high speed until stiff, glossy peaks form. Transfer the meringue to a separate bowl.
Soften the cream cheese in the now-empty stand mixer bowl by beating it on high until smooth and creamy.
Add the yolks, one at a time, mixing well after each addition. Scrape down the sides of the bowl and continue beating until the mixture is silky and fully combined.
Season the yolk mixture by adding the Italian seasoning, garlic powder, and salt. Mix again until everything is evenly blended.
Fold in the whipped egg whites gently, working in batches. Take care not to deflate the meringue—keep the mixture fluffy and light.
Scoop about 1/4 cup of the batter onto the prepared baking sheets, shaping each portion into a 4-inch circle that’s roughly 3/4 inch thick. Leave space between each one for even baking.
Bake for 20 to 30 minutes, or until the tops are golden and the bread feels firm to the touch. A little jiggle in the center means they need more time.
Cool on the baking sheets for a few minutes, then transfer to a wire rack to finish cooling completely.
Serve as a sandwich base, dinner roll, or fluffy snack on the side!
