🌿🍪 Grasshopper Cookies: The Ultimate Mint Chocolate Treat!


Hold on to your spatulas, mint lovers… because today we’re diving into one of the coolest, most chocolatey, and crave-worthy cookie combos of all time: Grasshopper Cookies! 💚🍫

If you’ve never had a Grasshopper Cookie before, let me just say: you’re in for a treat that tastes like a Thin Mint cookie went to pastry school and got a serious upgrade. These mint chocolate wonders are soft, fudgy, and refreshing all at once—perfect for mint-lovers, chocolate-obsessed bakers, or anyone who enjoys a cookie that makes people say “OMG what is this?!” 😍✨


🧐 Why Are They Called "Grasshopper" Cookies?


Great question! 🦗 Don't worry—there are zero insects involved. The name “Grasshopper” comes from the retro cocktail of the same name: a creamy green blend of crème de menthe, crème de cacao, and cream. It’s famous for its minty flavor and signature green hue.


Grasshopper Cookies borrow that cool mint-chocolate combo and give it a chewy, decadent twist. Think: chocolate + mint = flavor soulmates 💑


🍃 So What Are Grasshopper Cookies?


They’re rich, chewy chocolate cookies infused with peppermint extract and often topped or filled with minty buttercream, ganache, or drizzled chocolate. Some versions even sandwich the mint between two cookies for an extra indulgent bite! 🤤

There are lots of delicious ways to make them—but the flavor vibe is always the same: minty, fudgy, and totally refreshing.


These were born out of my love of Grasshoper ice cream from the East Coast. So I had to play with my food an develope them into a cookie!


👩‍🍳 How to Make Grasshopper Cookie Magic:


Let’s get minty with it! 🎶🍪


Cream the butter and sugars

Beat butter, sugar, and brown sugar until light and fluffy—like a soft cloud of deliciousness.


Add eggs & flavor

Mix in eggs, vanilla, and peppermint extract. If you want that classic minty green hue, add a drop or two of green food coloring here! 🌿💚


Combine dry ingredients

In a separate bowl, whisk together flour, baking soda, and salt. Slowly mix it into the wet ingredients until you’ve got a rich cookie dough.


Fold in chocolate chips

Stir in chocolate chips (or Andes mint pieces if you’re feeling extra). Every bite should have a melty little surprise! 🍫


Scoop & bake

Scoop cookie dough onto a lined baking sheet and bake at 350°F (175°C) for 9–11 minutes, or until just set. Let them cool for a few minutes before moving to a rack—they’ll firm up as they cool!

Grasshopper Cookies


Servings – 18-24 (Depending on the size of your cookies) Prep Time – 20 Minutes Cook Time – 10 Minutes

Ingredients:


  • 2 1/4 cups all-purpose flour

  • 1/2 teaspoon baking powder

  • 1 3/4 teaspoons cornstarch

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 cup unsalted butter, softened

  • 3/4 cup packed light or dark brown sugar

  • 1/2 cup granulated sugar

  • 1 large egg & 1 large egg yolk

  • 1 1/2 teaspoons vanilla extract

  • 1 teaspoon peppermint extract

  • 20 drops green food coloring

  • 2 cups chocolate chips, or mint chocolate chips, chopped Andes mints

  • 1 cup chopped walnuts, or your favorite nuts optional


Sugar-Free Option


  • 2 1/4 cups all-purpose flour

  • 1/2 teaspoon baking powder

  • 1 3/4 teaspoons cornstarch

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 cup unsalted butter, softened

  • 3/4 cup swerve brown sugar sweetener

  • 1/2 cup granulated Sucralose or Splenda

  • 1 large egg & 1 large egg yolk

  • 1 1/2 teaspoons vanilla extract

  • 1 teaspoon peppermint extract

  • 20 drops green food coloring

  • 2 cups sugar-free chocolate chips, I like the hershey chocolate chips

  • 1 cup chopped walnuts, or your favorite nuts optional



Instructions:

Preheat your oven to 350°F and line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking powder, baking soda, cornstarch, and salt. Set aside.


In a large mixing bowl, cream the butter, brown sugar, and white sugar using an electric mixer until light and fluffy. Add in the egg, egg yolk, vanilla extract, mint extract, and green food coloring, and mix until fully combined and smooth.


Gradually add the dry ingredients into the wet mixture, beating until the dough comes together and the green color is evenly blended. Stir in about 1¾ cups of chocolate chips (or mint candies) and chopped nuts, if using. The dough will be thick!


Cover and chill the dough in the refrigerator for at least 1 hour—this helps create that perfect chewy texture!


Once chilled, scoop tablespoon-sized portions of dough and roll them into 2-inch cylindrical shapes. Place them on your prepared baking sheet, spacing them a few inches apart. Gently press the remaining chips or candies into the tops of each dough piece for a bakery-style look.


Bake for 10 minutes, or until the edges are just set but the centers are still soft.

Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely. 🍪
