Crack eggs into medium sized mixing bowl and add water. Whisk into a fluffy constancy.
Add salt and pepper to taste.
Melt butter in pan. Pour egg mixture into hot pan, cook on low heat until eggs become stiff.
Lift one edge of the omelette and tilt pan to let uncooked egg mixture run into the open space to cook.
Add ham and cheese to the top of one half of the omelette.
Carefully fold over the opposite half of omelette onto the ham and cheese side.
Top with crème Fraîche or sour cream and garnish with chopped chives.
