Margarita Cupcakes with Fluffy Lime Cream Cheese Frosting
It's 5 o'clock somewhere… Right!? Sit back and relax… it's time to have a margarita… Well… cupcake that is!
- 1 Boxed Lemon Cake Mix
- 1/2 Cup Water or margarita cocktail mix
- 1/2 Cup Vegetable oil
- 1/2 Cup Gold tequila or water
- 1 tsp Lime zest
- 3 Eggs
- 1/4 Cup White decorator sugar crystals
- 24 Lime slices Sliced thin or 1/2" thick like slice cut into 4 chunks
- 24 Cocktail umbrellas Optional
- 1 8oz Package Cream Cheese
- 1/2 Cup Unsalted Butter
- 1 Tbsp Lime zest
- 1 Tbsp Lime Juice
- 5 Cups Confectionar's Sugar
Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups.
In large bowl, beat all cupcake ingredients with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Divide batter evenly among muffin cups.
Bake 18 to 22 minutes or until toothpick inserted in center comes out clean. Cool 10 Minutes; remove cupcakes from pans to cooling rack. Cool completely.
In medium bowl, mix frosting and food color until blended.
To make frosting, beat the cream cheese and butter together until light and fluffy, and stir in the lime zest and 1 tablespoon of lime juice.
Beat in the confectioners' sugar, 1 cup at a time, scraping the sides of the bowl thoroughly with a spatula after each addition.
Frost each cupcake using a piping bag or spread with spatula. Sprinkle with course sugar and twisted like slice. (Optional) Poke 1 umbrella into each cupcake. (Optional) Poke 1 umbrella into each cupcake.
