  • 1/2 Cup Butter Melted
  • 2 Tbsp Coconut oil
  • 7 Large Eggs Room Temperature
  • 1 tsp Baking powder
  • 2 Cups Almond flour
  • 1/2 tsp Xanthan gum
  • 1/2 tsp Salt


  1. Preheat oven to 350 degrees. 

    Prepare loaf pan with parchment paper. 

  2. In a large bowl, add eggs and beat for 1 - 2 mins on high.

  3. Add coconut oil and melted butter to eggs, continue beating.

  4. Add almond flour, xanthan gum, baking powder and salt. Mix well until all ingredients are incorporated. 

  5. Mixture will be thick. Scrap all mixture into prepared load pan. 

  6. Bake for 45 minutes. (Remove once a skewer comes out of the middle clean).

Recipe Notes

Slice for breakfast, toast and top with butter and sugar free jam.
