Delicious hot stack of pancakes even when you're on a diet??
- 2 cups Carb-quick mix
- 2 tsp vanilla extract
- 1 tsp cinnamon
- 1/4 cup stevia or sweetener of choice
- 1 1/4 cups water
- 1/2 cup heavy cream
- 1 whole egg
- 1/4 tsp salt
- Sugar free maple syrup butter, sliced fruit and whipped cream for topping pancakes (optional)
Place carb-quick mix, cinnamon, sweetener, and salt in large mixing bowl. Mix well.
Add egg, water, heavy cream, and vanilla extract. Mix until smooth.
Preheat skillet on low-medium heat.
Place a pat of butter in pan and melt. For large pancakes pour 1/2 cup, for small pancakes use a 1/4 cup of mixture into the center of pan.
Cook for 4-6 minutes or until small bubbles appear and bottom of pancake is golden brown.
Flip pancake continue cooking for 4 minutes or until golden brown.
Remove from pan.
Continue with remaining mixture.
Stack desired amount of pancakes, top with your choice of toppings. Serve warm and Enjoy!
