  • 2 cups Carb-quick mix
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 cup stevia or sweetener of choice
  • 1 1/4 cups water
  • 1/2 cup heavy cream
  • 1 whole egg
  • 1/4 tsp salt
  • Sugar free maple syrup butter, sliced fruit and whipped cream for topping pancakes (optional)


  1. Place carb-quick mix, cinnamon, sweetener, and salt in large mixing bowl. Mix well.

  2. Add egg, water, heavy cream, and vanilla extract. Mix until smooth.

  3. Preheat skillet on low-medium heat.
  4. Place a pat of butter in pan and melt. For large pancakes pour 1/2 cup, for small pancakes use a 1/4 cup of mixture into the center of pan.
  5. Cook for 4-6 minutes or until small bubbles appear and bottom of pancake is golden brown.

  6. Flip pancake continue cooking for 4 minutes or until golden brown.

  7. Remove from pan.
  8. Continue with remaining mixture.
  9. Stack desired amount of pancakes, top with your choice of toppings. Serve warm and Enjoy!
