Fluffy Keto Chefs Omelette

  • 4 large Eggs
  • Salt and Pepper to taste
  • 2 tbsp Water or cream
  • 3 oz Ham steak or deli ham chopped
  • 3 sprigs Fresh Chives chopped
  • 1/2 cup Cheddar Cheese
  • 1 tbsp Crème Fraîche or Sour cream
  • 1 tbsp Butter for pan


  1. Preheat frying pan on low heat.
  2. Crack eggs into medium sized mixing bowl and add water. Whisk into a fluffy constancy.

  3. Add salt and pepper to taste.

  4. Melt butter in pan. Pour egg mixture into hot pan, cook on low heat until eggs become stiff.

  5. Lift one edge of the omelette and tilt pan to let uncooked egg mixture run into the open space to cook.

  6. Add ham and cheese to the top of one half of the omelette.

  7. Carefully fold over the opposite half of omelette onto the ham and cheese side.

  8. Cook for an additional 2 minutes to melt the cheese and heat ham thoroughly.
  9. Slice omelette in half, slide omelettes onto plate.
  10. Top with crème Fraîche or sour cream and garnish with chopped chives.

  11. Enjoy!
